Start Here: The Five Building Blocks
Learn these five and most of the list below becomes assembly rather than cooking.
Taco seasoning from scratch. Two parts chili powder, one part cumin, half part each of garlic powder, onion powder, oregano and smoked paprika. Salt separately so you can control it. This keeps for six months in a jar and it is better than the packet, which is mostly cornstarch and salt.
Charred salsa. Broil tomatoes, a serrano, half a white onion and two unpeeled garlic cloves until blackened in patches, about 8 minutes. Blend with lime and salt. The blackening is the whole point, raw blended tomatoes taste flat.
Mexican rice. Toast the dry rice in oil until it smells nutty and turns opaque before any liquid goes in. Skip this and you get mush every time.
Refried beans. Cook the aromatics in the fat first, then mash the beans into it. Add the bean liquid back a splash at a time, not water.
Crema. Sour cream thinned with lime juice and a pinch of salt. Two minutes, and it makes every plate on this list look finished.
Easy Mexican Chicken Recipes
Chicken is the fastest route into this cuisine, and shredded chicken is the most flexible thing you can have in the fridge.

Chicken tinga, 35 minutes. Chipotles in adobo plus tomato, blended into a sauce, then shredded chicken folded in. Start with one chipotle and one spoon of the adobo, the heat builds as it sits.

Ground Beef and Shredded Beef
Weeknight beef tacos, 20 minutes. Brown the beef hard and undisturbed for the first three minutes to get real crust, then break it up. Drain most but not all of the fat, the seasoning needs something to cling to.
Beef and bean skillet, 30 minutes. One pan, beef, black beans, corn, salsa, cheese melted on top under a lid.
Picadillo, 40 minutes. Beef with potato, carrot and warm spices. Cheap, filling, and it freezes better than almost anything else here.
Barbacoa, slow cooker 8 hours. Chuck roast with chipotle, cumin, cloves and lime. Shred it in the cooking liquid, never on a board, or it dries out on the way to the table.

Pork, Including the Carnitas Everyone Asks About
Oven carnitas, 3 hours. Pork shoulder cubed, seasoned, cooked low with orange and onion until tender, then broiled on a sheet pan for the crisp edges. The broil step is not optional, it is the difference between carnitas and pulled pork.
Chorizo and potato tacos, 25 minutes. Render the chorizo first, cook the diced potato in that orange fat. Do not add extra oil, there is plenty.
Al pastor style pork, 45 minutes. Thin pork shoulder slices marinated in pineapple, chili and vinegar, then seared hot and fast.

Shrimp and Fish
Garlic lime shrimp, 12 minutes. The fastest dinner on this page. Shrimp cook in about 90 seconds a side, and they go rubbery the moment you look away.
Baja fish tacos, 30 minutes. Battered white fish, cabbage slaw, chipotle crema. Beer in the batter is traditional, cold soda water works identically.
Camarones a la diabla, 20 minutes. Blended dried chilies over shrimp. Start with fewer chilies than you think.

Chicken tortilla soup, 40 minutes. Fry the tortilla strips yourself, the bagged chips go soggy in seconds.
Pozole rojo, 2 hours. Hominy and pork in a red chili broth, with the raw garnishes doing half the work: cabbage, radish, oregano, lime.
Caldo de res, 2 hours. Beef and vegetable soup, the whole meal in one bowl.

Seven layer dip, 15 minutes, no cooking. Beans, guacamole, crema, cheese, tomato, olive, scallion.
Queso fundido, 20 minutes. Melted cheese with chorizo, served in the pan it melted in. It sets fast, so it goes out last.
Sheet pan nachos, 20 minutes. Layer twice rather than piling once, or the bottom chips get everything and the top gets nothing.
